Berry Breakfast Super Smoothie

Why is this smoothie super?  Because it contains so many good-for-you nutrients, antioxidants, and essential fatty acids… and it tastes delicious.  One of these smoothies contains 38% of the recommended daily value of protein, 70% of calcium, 52% of fiber, 28% iron, and 50% Vitamin B12.  You could also add kale or another leafy green vegetable to amplify the nutrient content even more!  Like all vegan foods, this smoothie contains zero cholesterol.

Ingredients:

  • 1/2 to 1 cup soy (or other non-dairy) milk (I used vanilla soy milk)
  • 1 tbsp chia seeds
  • 2 tbsp ground flax seeds
  • 1 container Whole Soy yogurt (I used Mixed Berry)
  • Handful fresh blueberries
  • Large handful frozen raspberries
  • 1/4 package silken tofu

First add about 1/2 cup soy milk then chia seeds and flax seeds and mix with a spoon.  Then add yogurt, fruit, and tofu.  Blend ingredients with an immersion blender (or a regular blender), adding milk as necessary to adjust to your desired thickness.
